Episode 1 - OREO CUPCAKES

Hi friends and foodies, and welcome to Taylor Thyme!
On the premiere episode, we will be making a dessert that will satisfy the sweet tooth of cake lovers and cookie enthusiasts alike: Oreo cupcakes. These melt-in-your-mouth cupcakes are topped with an Oreo cream cheese frosting and decorated with chocolate drizzle and Oreo cookies. Fluffy cream cheese and delicious chocolate come together to create a decadent treat perfect for any occasion!
Some notes before we get started:
- For this recipe we used a stand mixer with the paddle attachment but mixing by hand will work just fine.
- You will need piping bags and your choice of decorating tips for the frosting. Get creative and try a fun design!
- Baking is a fun adventure for all ages, but kids should always have adult supervision when in the kitchen.
- All ingredients should be used at room temperature.
You will need the following ingredients:
Oreo Cupcake Batter
¾ cup sugar
6 tbsp butter, softened
½ tbsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
2/3 cup whole milk
3 large egg whites
10 crushed Oreos
8oz cream cheese
Oreo Cream Cheese Frosting
½ cup butter
8oz cream cheese
1 tsp vanilla
¼ tsp salt
4 cups of powdered sugar
Chocolate Drizzle
1 tsp black powdered food coloring
1 cup melting chocolate
2 tbsp shortening
Now to get baking!
Steps for Cupcake Batter:
- Preheat oven to 350 degrees and line baking tin with paper liners.
- Add butter to mixing bowl and whip on medium speed until soft peaks form.
- Add sugar, vanilla extract, and vanilla bean paste and mix until combined.
- Slowly add egg whites while mixing on low speed. Use a rubber spatula to scrape the sides of the bowl as needed.
- In a separate mixing bowl combine flour, salt, baking powder and whisk together until combined.
- Add flour mixture and milk to the batter by mixing in approximately 1 cup of flour and ⅓ of the milk at a time, alternating as you go to ensure the batter remains smooth. Use a rubber spatula to scrape the sides of the bowl as needed.
- Add crushed Oreos and mix gently until combined.
- Using a scoop or large spoon, fill tins approximately ¾ full.
- Bake for 15-20 minutes. (Pro tip: check if your cupcakes are done by inserting a toothpick into the center of a cake. If it comes out clean, they’re done!)
- Let cool before decorating.
Steps for Oreo Cream Cheese Frosting:
- Add butter and cream cheese to mixing bowl and whip on medium speed until soft peaks form.
- Add powdered sugar slowly to cream cheese mixture while mixing on medium-low speed until smooth.
- Add vanilla extract and mix until combined.
- Prepare your piping bag by adding your choice of decorating tip and placing the bag into a cup with the bag covering the opening.
- Spoon in frosting and decorate cooled cupcakes to your liking.
Steps for Chocolate Drizzle and Toppings:
- Place melting chocolate into a microwave safe bowl and microwave in 30 second increments until fully melted and smooth, stirring with a spoon in-between rounds.
- Mix in shortening with a spoon until fully combined and smooth.
- Add powdered black food coloring and stir until fully dissolved.
- Pour chocolate drizzle into piping bag or Ziploc bag and snip the corner to create a small hole.
- Drizzle over icing in a back-and-forth motion.
- Cut whole Oreos in half and press one half into each cupcake.
