Premiering in 1980, Cookin' Cheap was a staple on Blue Ridge PBS for more than 20 years. This comedy cooking show was served up lots of laughs and interesting dishes. Periodically, we'll share a favorite recipe here from the show.
This recipe was from season 18 in 1998 and was sent in by someone who was from Northern Ireland.
IRISH SHEPHERD'S “PIE”
2 lbs. ground beef
1 T. oil
2 onions, finely chopped
2 tomatoes, chopped
1 cup beef stock or bouillon
1/2 tsp. thyme
1/4 tsp. sage
1 T. chopped parsley
Salt & pepper to taste
5 med. potatoes, boiled and mashed
1 T. butter
Preheat oven to 375. In a skillet, brown beef in oil. Remove beef from pan and set aside. Drain most of accumulated fat from pan. Sauté onions until tender, add tomatoes and cook for 2-3 minutes. Add broth and stir in herbs and seasonings. Return browned meat to skillet and continue cooking for five minutes. Transfer all ingredients to a casserole or deep 9 inch pie dish. Top with mashed potatoes, scoring them with a fork. Pat with butter and bake uncovered in 375 degree oven for 35-40 minutes.
